White Bean Thai Basil
Chicken Chili - Chef: Kathleen Showalter, Seattle

1 medium onion, chopped
2 cloves of garlic
1/4 cup butter
2 cups chicken, cut into cubes & boiled
1 32 ounce can great northern beans
4 cups chicken broth
1 medium tomato, seeded and chopped
1 tbls fresh cilantro, chopped fine
1 tbls fresh basil, chopped fine (optional: use
Thai basil) |
1/2 lime, juiced
1 1/2 tsp chili powder
1 1/2 tsp cumin
1/2 tsp oregano
1/2 tsp salt
1/4 tsp white pepper (optional)
1/4 tsp red chili flakes |
Procedure:
1. In a 4-quart pot, cook
onion and garlic in butter over medium heat until
onion is tender
2. Add the rest of the ingredients, stir, and
bring to a boil.
3. Reduce heat, cover, and simmer for 1 hour,
stirring occasionally.
Notes: Instead of butter
or oil, use 2-3 tablespoons bouillon broth or
olive oil when sauteing garlic and onion to cut
down on fat. Also, you can cut up chicken into
small pieces and add it raw when sauteing garlic
and onion, instead of adding cooked chicken to
simplify the cooking process. |

Bread Pudding with Warm
Honey Yogurt Topping - Chefs: Lisa Becklund

1 tsp butter or cooking
spray
8 slices whole weat bread (stale bread is best)
1/4 cup butter
1/3 cup raisins
2 cups skim milk
3 3ggs |
1/4 cup sugar
11/2 tsp lemon zest
1/2 tsp cinnamon
1/4 tsp nutmeg (optional)
1 tsp vanilla extract |
Procedure
1. Preheat oven to 350. Lightly grease a baking
dish with butter or spray with cooking spray
2. Cut bread in half and spread butter on one side.
Overlap bread in prepared baking dish. Sprinkle
with raisins.
3. Mix milk, eggs. sugar. lemon zest, cinnamon,
nutmeg, and vanilla.
4. Pour mixture over bread and let stand at least
one hour or refrigerate overnight.
5. Bake about 45 minutes. Top with yogurt topping. |
Warm
Yogurt Topping |
| 1 cup nonfat yogurt |
2 tbls honey |
| If available,
combine ingredients and microwave 2-3 minutes. Or,
heat honey and yogurt on stove top. If a double
broiler is not available, take two pots, fill one
with water and boil, and then place another pot
with yogurt mixture above the boiling water and
heat mixture. |
